At 24, I was hit with a diagnosis that changed everything: brain cancer. MD Anderson gave me less than a year to live. In those moments, you don’t think about business plans; you think about the life you don’t get to live. By the grace of God, I’m still here. I got married to my college girlfriend and I’m the proud father of two beautiful boys. For many years, I was uncertain whether I would reach the age of forty, much less have the opportunity to establish a lasting legacy for my family.

My journey into the art of small-batch sausage didn’t start in a boardroom; it started at home. In 2020, I began mastering the craft out of a desire to provide something pure and exceptional for my own family when prices for meats soared out of control. What began as a personal necessity quickly became a relentless pursuit of perfection.
For years, these recipes were kept close to the vest—shared only during Sunday dinners and backyard gatherings with our inner circle. But as the encouragement from family and friends grew, so did my realization that life is too short not to do what you love.
